灘区もファストフード店が目につくようになった。ランチタイム、携帯を覗き込みながら工場でつくられた食材を胃袋にかき込む灘クミンを見ると心が痛む。いただきますもごちそうさまもあったもんじゃない。ランチタイムではなくどう見てもエサの時間だ。灘区はこのままファスト風土化が進み「どこにでもあるような街」になるのか？そんなファストランチタイム化に反旗を翻すメニュー登場。水道筋で異彩を放つ異色のビストロ「異食屋ＴＵＢＯＭＡＮ」。ホテル仕込みの技と水道筋の市場で仕入れた旬のネタをアテに飲める店だが、土日祝日のみランチタイム営業開始。その名も「ゆっくりランチセット」。「てっとり早く食べたい人は来ないで」とマスターＫＲＲ氏。その挑発的で明確なコンセプトは１２：２０～１４：２０という変則的なランチ営業時間にも貫かれている。地元水道筋の食材を使ったパスタときっちり仕込まれたコクのあるスープ、ホテルライクなキレのあるサラダのスローメニューはワインを合わせざるを得ない。もちろん五月蝿いTVも、にぎやかな酔客もいない。コチコチという時計の音と半屋外的な店内にしみ出す水道筋の街音をBGMにゆったりグラスワイン（350円）を傾ける昼さがり。「平日や夜はなかなか水道筋に来られない人に来てほしい」とのこと。つまりディープ水道筋へいざなう入門メニューでもあるのだ。
